1 Tortilla packet

2 Onions

Red salsa: Half onion 2 Tomatoes, 3 Tomatillos, Dried chile de arbol packet, Dried chile de guajiro packet, 2 Garlic cloves

Cooking oil (avocado, grape seed, canola, corn, etc.)

Sour cream

Salt & Pepper

1 Avocado

1 Queso fresco

Eggs (if you prefer)


Salsa: Sauté tomatoes and tomatillo in a pan until dark. Blend half onion, a handful of dry chiles, sautéed tomatoes and tomatillos and two garlic cloves together.

  1. Cut tortillas into medium pieces
  2. Chop one whole onion into small pieces
  3. Sauté onion until light brown
  4. Add chopped tortillas
  5. Sautee until light brown
  6. Add salsa and cook until water evaporates
  7. Add salt and pepper
  8. Fry 2 eggs and serve over chilaquiles
  9. Slice avocado and place over eggs and chilaquiles
  10. Crumble queso fresco over dish
  11. Add a dollop of sour cream; and enjoy!
